We are picking up five new breeding stock Berkshire hogs this weekend. We also are getting a Berkshire/Red Wattle Cross. We plan on keeping all the new hogs as breeding stock. We hope to provide our own feeder piglets by next summer and then sell the Berkshire pork to you, our customers by next fall.

Berkshires are a rare breed of heritage hog that are known for their juiciness, flavor and tenderness. The meat is pink-hued and heavily marbled. Its high fat content makes it suitable for long cooking and high-temperature cooking. They are prized in Japan where their meat is know as Kagoshima Kurobuta. They pasture well, are gentle, docile, and friendly. They take longer to grow than modern breeds but good things come to those that wait.

We will update the Blog this weekend with pictures of the new piglets.

Thanks for taking the time to read this Blog.

Feel free to contact us with any questions.

Tim
